
A Vietnamese dish can be enjoyed any time of the day and are not divided into courses. Food is served at once and shared from common dishes. Rice and noodles may be eaten with the meal. Northern Vietnam tend to cook and enjoy stir-fries , while in Southern Vietnam vegetables, fish and other seafood are the favourite and in Central Vietnam much more spicier and colourful food are eaten and served.

Vietnam is a lovely country to visit. The country is bordered by Cambodia and Laos on the West, by China on the North and by the South China Sea and Gulf of Thailand on its Eastern and Southern coastline.
Ingredients
- 50 g crab meat
- 60 g prawn meat
- 15 g dried mushrooms
- 40 g sweet potato or carrot
- 1 tsp chicken stock
- tsp ½sugar
- tsp ½freshly milled black pepper
- 1 tsp fresh spring onion chopped
- 1 tsp egg yolk
- 1 tsp shallot or red onion chopped
- 6 leaves – 8 pieces of rice paper . This “softens” the rice paper and make it easier to roll. cover with fresh bananaor cabbageone day before or at least 3 hours
- 50 ml Coconut juice …or mix 1 tsp sugar in 50ml water beer is also fine
- Cooking oil for deep frying

Instructions
- Soak the mushroom in water for 30 minutes, drain and cut in julienne. Peel the sweet potato or carrot and cut in julienne too.
- In a bowl mix together all ingredients except the rice paper, juice or beer and cooking oil. Brush some juice or beer on the rice paper. Fold the rice paper 2 inches toward the centre, place 1 tsp of stuffing on the folded part. Now fold the left and right side of the rice paper into the centre. Roll up tightly from the bottom to the top.
- Deep fry until lightly browned. Serve with lettuce, green leaves, fresh noodles and a dipping sauce of your choice.
