This is just a lovely and weird combination of ingredients that works!! It is a bit expensive to make, but worth it. It is a 2 star which means it is easy to make.

  1. Line the bottom and sides of a dish with the finger biscuits and sprinkle the 10 ml lemon juice over. Mix condensed milk and lemon juice and mix till it’s a thick consistency, DON’T overmix. Add chopped cherries, marshmallows and drained pineapple. Beat cream till stiff and fold into mixture. Add gelatin, mix well. Let it set in the fridge for 3 hours or overnight. Decorate with cream and more cherries and nuts and drizzle chocolate over before serving.
  2. To make life easier cut the marshmallows into small pieces by using a pair of scissors dipped into hot water.
  3. Sponge fingers are low density, dry, egg-based, sweet sponge biscuits. They are used in many dessert recipes, such as trifles, and are also used as a fruit or chocolate gateau lining and for the sponge of tiramisu. Sponge/finger biscuits are sometimes known by their Italian name Savoiardi, sponge fingers in England, or as Boudoir in France.
