A fantastic start to any meal
Ingredients
- 250 g frozen white fish (Hake or Cod)
- 200 ml milk
- 100 ml Water
- 125 ml Mayonnaise
- 4 small gherkins (Chopped)
- 1 Onion (very finely chopped or grated)
- 5 ml Lemon juice
- Black-Pepper and salt to taste
- A few drops of Tabasco sauce

Instructions
- Take the fish directly from the freezer and remove the skins. Rinse the sides with the skin under running cold water for 15 seconds, this process makes it easier to remove the skins. Add the milk and water to a saucepan and poach the fish for 6 minutes. Remove from the heat, discard the liquid and let the fish cool down. Once cooled down flake the fish. Don’t overdo this as you what to keep the “Crayfish” look.
- Mix all other ingredients and add it to the fish, mix well but be very careful not to “brake” the fish. Chill well.
- Arrange lettuce leaves of your choice on a small plate and pile some of the fish on top. Garnish with eatable flowers, parsley and a lemon wedge.
